      1. Preparation of prickly pear juice: Fruit harvesting: prickly pear fruits are harvested from September to October, and yellow fruits must be harvested. Then add potassium sorbate, sodium hexametaphosphate, and citric acid solution according to the formula, and make up with water.

      9. Clarification and filtration: The average tannin content in prickly pear and prickly ash juice is 0.62% and 0.72%, respectively. The pectin content in prickly ash fruit is 1.4% to 2.0%. The use of pectinase and gelatin for clarification is necessary to achieve satisfactory clarification and remove astringency. The required quantity needs to be determined after a small trial. First, add pectinase and stir well. After 6 hours at room temperature, add a gelatin solution with a concentration of 5% to 10%. At the same time, add a small amount of diatomaceous earth, stir thoroughly, and let it stand at 15 ℃. After 3 days, filter the supernatant with a diatomaceous earth filter.

      10. Degassing: During degassing, the vacuum degree inside the degassing cylinder is 90.7-93.3 kPa, and the juice temperature is below 25 ℃.

      11. Sterilization and filling: After degassing, the composite juice is immediately sent to a high-temperature instantaneous sterilization machine, sterilized at 90-100 ℃ for 25-30 seconds, and filled under sterile conditions.

      12. Storage: It should be stored below 10 ℃, preferably at 4.5 ℃.
