      ① Select yellow peaches with a maturity of 8.5%, fresh and plump, free from pests, diseases, and mechanical damage, and a diameter of over 5cm for raw material selection.

      ② Cut the yellow peach into two halves along the seam, without tilting or causing large or small pieces. After cutting in half, immerse the yellow peach slices in 2% water to protect the color. Cut half of the yellow peach into pieces and use a pit cutter to remove the pit. The pit should be smooth and oval shaped, but the fruit should not be dug too much or crushed, and the red flesh can be left slightly. After digging, it should be promptly soaked in alkali or soaked in 2% water for color protection.

      ③ Peel and rinse the peach slices and evenly lay them in a single layer on the steel wire mesh of the alkali press, so that the skin is fully exposed to the alkaline solution. The concentration of alkaline solution is 6% to 12%, and the temperature is 85 to 90 ℃.

      The processing time is 30-70 seconds, followed by rinsing the alkaline solution with clean water.

      ④ Pre boil: Place the peach chunks washed with alkaline solution into a hot solution containing 0.1% citric acid, and blanch at 90-100 ℃ for 2-5 minutes until the peach chunks become semi transparent. Immediately cool with cold water after blanching.

      ⑤ Use a sharp knife to remove surface spots and residual skin flakes from peach chunks during trimming and canning. The repaired peach pieces should be separately canned according to different colors and sizes, with attention to neat arrangement. The canning amount should not be less than 55% of the net weight. After canning, immediately inject hot sugar water at 80 ℃ or above, with a sugar concentration of 25% to 30%, and add 0.1% citric acid and 0.03% isoVc.

      ⑥ Exhaust and seal the tank after thermal exhaust in the exhaust box, and immediately seal the tank when the center temperature reaches 75 ℃. Or vacuum exhaust, with a vacuum degree of 0.03-0.04MPa.

      ⑦ Sterilize and cool in boiling water for 10-20 minutes, then cool to around 38 ℃.
